True Hatch chilies are only grown in the Hatch Valley of New Mexico, where fields of colorful chilies stretch along the Rio Grande River. Hatch chilies boast a fruity, faintly smoky flavor, with a subtle sweetness & mild heat level. Hatch chilies start off as deep green color & turn red as they mature. Green Hatch chilies are said to possess a smokier, more intense flavor than fully ripened Red Hatch Chiles, which are sweeter & slightly hotter. We use only 100% green Hatch chilies for our Green New Mexico Hatch Chile Powder.
